These Tex-Mex Breakfast Burritos are ideal for breakfast prep. Eggs, ground beef, bell peppers, and cheese make the burritos easy to prepare and freeze for a healthy meal anytime!
INGREDIENT
– 1 1/2 lbs. ground beef– 1 small yellow onion– 1 sweet bell pepper– 2 Tablespoons homemade taco seasoning– 12 egg– 1/2 cup milk– 2 teaspoons olive oil– Salt and pepper– 3 cups shredded cheese of your choice (I like pepper jack or Mexican blend)– 16 flour burrito shell

INSTRUCTION
A spatula breaks up ground meat in deep skillet. Medium-brown. Cook onion and pepper until tender and beef no longer pink. Mix in homemade taco seasoning.

Drain and store grease. Mix eggs and milk in a large bowl. Heat olive oil in a large non-stick skillet on medium. Regularly stir eggs to gently scramble.

Don't overcook eggs to avoid rubberiness ! Add salt and pepper after cooking. Cover a large baking sheet with parchment. Make beef, egg, cheese, and tortilla burritos on a clean surface.

Beef, eggs, and cheese on a tortilla. Fold the tortilla bottom and top, then tightly roll left-to-right. Place burrito on baking sheet and repeat with remaining tortillas.

Remove solid from tray and put in freezer-safe ziplocked bag. Microwave 30–45 seconds after overnight thawing. Served with salsa and sour cream.
